Paccheri is a type of traditional pasta from Campania which looks like giant maccaroni. It is usually served with rich sauces like Genovese, Neapolitan ragu' or even with lobster. It may sound odd but you can bake Paccheri, after you have boiled it, and fill the tubes with tomato sauce, mozzarella and basil.
The name of the pasta comes from the Greek terms, (“pas”-all and” keir”-hand) which refers to a pat or a slap given with an open hand, whereas in Neapolitan dialect, it’s “pacchero” the ‘slapping’ noise made when throwing pasta into boiling water.
